1 bulb of kohlrabi, peeled and sliced
1 bulb of watermelon radish, or a few small red radishes sliced (the watermelon radish has to be peeled)
1 cup of arugula
1 small shallot, sliced
1 pint container small heirloom cherry tomatoes, or regular cherry tomatoes cut in half
3 sprigs of fresh tarragon, leaves picked off
1 cup of buttermilk
1 TB mayonnaise
1 tsp white wine vinegar
½ cup feta cheese, crumbled
Mix the buttermilk and mayonnaise together. Add the vinegar and the feta cheese. Taste and add salt and pepper if needed.
Take a bowl and add the kohlrabi, radish, arugula, shallot, tomatoes, and tarragon and pour the dressing over this. Toss to coat evenly and adjust with salt and pepper.
Serve immediately.
