Paprikash
Half Chicken Marinated in Paprikash serves 2 – 4
Paprikash is typically a dish that involves taking pieces of chicken and braising it in
a rich and creamy sauce with a lot of paprika flavor. I took the idea and flavors from that dish and turned it into a marinade which we then grilled for a much different and flavorful chicken dish. This can be made equally delicious in your home broiler if you don’t have access to an outdoor grill.
Two half chickens
1 large or 2 small shallots
2 cloves of garlic, sliced
1 lemon, juiced
1 tablespoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons regular Hungarian paprika
1/2 teaspoon hot Hungarian paprika
2 tablespoons plain yogurt
Combine all of the ingredients except for the
chicken. Mix the ingredients very well. Rub
the pieces of chicken really well and place in
a container and marinade in the refrigerator
overnight.
After 24 hours, the chicken is ready to grill.
Set up your grill to medium heat. If you’re
using charcoal, make sure that you only have
nice hot coals. If using gas, set it to medium.
Make sure your grill is well oiled and place
the chicken skin side down on the grill. Cook
the chicken for about 20 minutes, making sure
the skin doesn’t burn. Turn the chicken over
and continue to cook for another 20 minutes or
until the legs reach 155º internal temperature.
Once you’ve reached the temperature, remove and
place on a serving platter. Serve with your
favorite side dish and some great beer or white
wine!
